Spicy Soba Noodles in Peanut Sauce

1 carrot, peeled

1/3 cup peanut butter

2 tbsp honey

1 tbsp chopped, peeled, fresh ginger

1 tbsp low-sodium soy sauce

1 tsp crushed red pepper

1 garlic clove

1 -16oz can fat-free chicken broth

1 pound skinned, boneless chicken breasts, cubed

5 cups cooked soba (buckwheat noodles)

6 tbsp sliced green onions

6 tbsp, chopped, unsalted dry-roasted peanuts


Shave carrot lengthwise into thick strips using a vegetable peeler, set aside.

Combine the peanut butter, honey, ginger, soy sauce, pepper, garlic and 1/3 chicken broth. set aside

Cook chicken in remaining broth until cooked through

Combine the chicken and sauce with the carrots in a large bowl. Divide among 4 plates and sprinkle with green onion and chopped peanuts.
