Brie with Marinated Fruit

I love this recipe in the Autumn. The oozy translucence of melted brie combined with the wonderful sweetness of dates is amazing.

 

1 medium apple, pear cored, peeled and chopped

1/3 cup snipped dates

1/4 cup dried currants or raisins

3 tablespoons rose wine

1/4 cup chopped pecans, toasted

2-8oz Brie rounds or wedges

2 tbsp apple jelly melted

Assorted crackers or toasted baguette slices

 

In a small bowl, combine chopped apple and pear, dates and wine or apple. Cover and let stand for 2 hours; do not drain.

stir in toasted pecans. Preheat oven to 350 degrees

Cut one brie round in half horizontally. Place one half cut side up in an ungreased 9 inch pie plate. Top with 1/4 of the fruit mixture and top wih another half of brie. Place the remaining fruit mixture on top.

Bake unovered in preheated oven for 10-12 minutes or until the brie is melted. Drizzle top with 1 tbsp of melted jelly.

Serve with crackers…makes 10-12 servings.
